There's nothing I love more than a hearty, warm meal during the fall and winter. This recipe is my go-to because it is so simple and quick to make plus, it is packed full of protein and fiber.
Let's start with the squash....
1 delicata squash seeded and slice into 1/4-inch pieces
Spray with oil and toss with salt, pepper, and a sprinkle of paprika
Place in the air fryer at 390* for 13 mins
Squash should be slightly crispy and cooked all the way through so depending on how thick you cut the slices, it may need more or less time.
While the squash is cooking.....
Place turkey in a sauté pan on medium heat
Once it starts to brown add in the spices
1 lb lean ground turkey
1 tbls curry
1/2 tbls cumin
1/2 tsp ginger
1 tsp garlic powder
Chili flakes to taste
Salt and pepper
Sauté until meat is cooked
Then add….
1 cup cooked lentils
1/3 cup dried cranberries
1/8 cup Pepitas
Heat through and then add spinach
1 cup chopped spinach - do not wilt, gently toss with heat
Place in dish and top with squash and feta
