
I am always a fan of quick and easy meals. When I was younger and had the time, I loved spending hours cooking a big delicious meal. Now, I just want easy nourishing food that makes me feel good and takes minimal prep time.
This lunch is packed full of protein and fiber to keep you satiated and satisfied.
Recipe
(4 servings)
2 cups shredded chicken
1 can chickpeas
1/2 cup diced green pepper
1/4 cup red onion
1/4 feta cheese
1/3 cup green goddess yogurt dip
1/4 tsp chili flakes
Lemon juice to taste
Salt and pepper
Mix well and refrigerate. Easy!
